Tabbouleh is a popular middle eastern salad made mostly of finely chopped parsley, tomatoes, fresh mint, onion, bulgur (or couscous), and seasoned with olive oil, lemon juice, salt and pepper.

Ingredients
  cup couscous (or quinoa for variation)
  cup hot vegetable broth
  cup fresh lemon juice
  cup chopped fresh mint
 ¼ tsp granulated sea salt
 1 ½ cups chopped fresh parsley(flat-leaf)
 ½ cup finely chopped scallion (spring onion)
 ½ cup finely chopped tomatoes
 ½ garlic clove (pressed)
Instructions

Place the couscous in a bowl, and pour hot vegetable broth over it. Cover with a tea cloth and tightly secure a lid or plate over it. Set aside for 15 minutes until all the water is absorbed.

In the meantime finely chop all your salad ingredients. Then, once the couscous is ready add the pressed garlic, lemon juice, parsley, mint, tomatoes, scallions. Toss to combine or stir gently.

Leave at room temperature for a couple of hours, so that the couscous can continue to absorb extra moisture and swell.

When ready to eat, add olive oil, salt and adjust seasoning accordingly. Serve with lettuce leaves (optional).
