Gravy is a wonderful sauce to pour over roasts, and to use in pies, casseroles and stews. Traditionally English, this caramelized and rich vegan gravy will add so much flavour to your meals.
Heat a large pan over medium heat. Once hot, add olive oil followed by chopped onions, garlic and mushrooms. Cook for about six minutes until sautéd, stirring often.
Now, stir in cornstarch and nutritional yeast and cook for a further three minutes. Next add herbs, broth and plant based milk. Once again, stir to combine and simmer for a further six minutes.
Transfer gravy to a processor and blend until smooth and creamy. You can leave some of the onions or mushrooms unblended for more substance. Taste and add seasonings as needed.
