Garden Pea Soup is wonderful for those who enjoy creamy textured soups and light meals. Garden Pea Soup is wonderfully balanced and goes well as a starter or main depending on portion size.
First, add a tablespoon of olive oil to a large pot. Add the finely chopped onions, diced potatoes and minced garlic. Sauté over medium heat until onions are fragrant and have softened for about 3 minutes.
Now, add the fresh parsley and continue to sauté for a further 2 minute. While stirring, add the vegetable broth followed by seasoning. Let it come to a gentle simmer and cook for 5 more minutes.
Add all of the remaining ingredients, like frozen peas and coconut milk. Stir to combine and then secure a lid over the pot. Bring the soup to a boil over high heat. Once it starts to boil, remove the lid and reduce heat to low while the soup simmers for an extra 10 minutes.
Carefully transfer the soup to a blender (or use a handheld blender) and blend on high until smooth and creamy.
Transfer to bowls and enjoy with some toasted rustic bread. Leftovers can be stored for up to 5 days in a sealable container.
