French Onion Soup consists of caramelized onions drenched in thick vegetable gravy with crunchy croutons.
In a deep pot, melt the butter (or heat oil) over medium heat. Sauté onions (chopped into long strips) and sugar together until onions are translucent and have caramelised nicely, do this for about 15 minutes while stirring every so often to avoid onions sticking and burning.
Now, add the minced garlic and dried herbs and continue cooking for a further 5 minutes. Then, stir the flour into the onions and cook for a further minute before pouring in the red wine. Bring to a simmer and cook for about 10 minutes, or until the wine has evaporated.
Add the vegetable broth, bay leaves and seasoning. Turn heat up to bring to a boil and turn right down to gently simmer for a further 10 minutes.
Remove from heat and serve hot. Top the onion soup with croutons or a slice of toasted baguette smothered with vegan cheese of your liking (optional).
