Chocolate Avocado Pudding is beautifully put together with naturally rich, nutrient dense and sweet ingredients like avocados and grape molasses.
Set aside 15g of dark chocolate for decoration (optional) and break the rest into squares and place them in a heatproof bowl and set the bowl over a pan of shallow simmering water. Once the dark chocolate starts to melt, stir in the maple syrup, vanilla extract, almond or coconut milk and the cocoa powder, continue stirring until smooth.
Add the chocolate mixture and avocado flesh in a blender or food processor. Blend until the mixture is smooth. Divide the mixture between 4 - 5 serving glass containers. Chill for at least 3 hours.
To make the decoration, gently scrape the edge of the reserved chocolate using a vegetable peeler or grater to make long shards or shavings. Store in an airtight container until needed. Scatter over the pudding along with crushed roasted peanuts (optional) just before serving.
