Ingredients
 ½ very large yams(sweet potatoes)
½ tbsp extra virgin olive oil
 ½ tbsp organic coconut sugar
 ¼ tsp ginger powder
 ¼ pinch granulated sea salt
 ¼ tsp lime juice (optional)
  tsp cinnamon powder
Instructions
1

Preheat the oven to 370 degrees F. and line a baking tray with parchment paper and set aside. Wash your yam thoroughly under warm water. Peel and then cut into roughly 1/4 inch slices widthways (so that it's circular' ish in shape) and then place the yam slices in a large mixing bowl. (The two large potatoes should yield 12 - 14 individual slices.)

2

In a small saucepan, add olive oil, ginger powder, salt, cinnamon powder and sugar and whisk well. Set over medium heat and cook until the mixture is well dissolved for about 30 seconds. (If using, add lime for a more zesty sweet flavour).

3

Carefully pour the hot oil mixture over the sliced yams and toss to combine, or use a wooden spoon to coat the yams by stirring. Make sure all the yams are covered in the marinade.

4

Now, transfer the coated yam slices onto the prepared baking tray without overcrowding it (cook in two batches if necessary). If there is any wet mixture leftover, pour it over the yams. Optionally, you can also lightly dust the yams with some more cinnamon powder over the top (no more than a pinch or two).

5

Bake the yams for 40 -50 minutes in the midsection of your oven, cook until golden, crispy around the rims and fork-tender. Enjoy immediately!
